Ingredients:
- 2 cups all-purpose flour
- 1 ½ cups sugar
- 2 tsp baking soda
- 1 tbsp cinnamon

- 2 cups zucchini grated/shredded
- ¾ cup vegetable oil
- 1 tbsp vanilla
- 1 ½ cup walnuts chopped
Instructions:
- Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, line two 8×4 loaf pans.
- In a medium mixing basin, combine flour, sugar, baking soda, cinnamon, and salt. Set aside after whisking everything together.
- In a large mixing bowl, whisk together the eggs. Combine the zucchini, oil, and vanilla in a mixing bowl.
- Combine the dry and wet ingredients in a mixing bowl. Mix in the walnuts until they are just mixed.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Cool for 5 minutes in the pans before removing and cooling on a wire rack.
