Best Carrot Cake Ever

  • 6 cups grated carrots
  • 1 cup brown sugar
  • 1 cup raisins
  • 4 eggs
  • 1 ½ cup white sugar
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • 3 cups all-purpose flour
  • 4 tsp ground cinnamon
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 1 cup chopped walnuts



  1. In a larger bowl, mix grated carrots and brown sugar. After an hour, whisk in the raisins.
  2. Set the oven to 350 degrees Fahrenheit (175 degrees C). Make two 10-inch circular cake pans with butter and flour.
  3. In a big basin, lighten the eggs. Add vanilla, oil, and white sugar gradually. Add pineapple and stir. In another dish, whisk together the flour, cinnamon, baking soda, and salt. Add to the egg mixture and stir until combined. Add walnuts and a mixture of carrots. Pour into the prepared pans evenly.
