30 Minute Loaded Steak Quesadillas

Ingredients:

FOR THE STEAK:

  • ¾ – 1 lbs sirloin steak
  • 1 tsp ancho chili powder
  • ½ tsp paprika
  • ¼ tsp ground Mexican oregano
  • ¼ tsp cumin
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • Pinch of cayenne pepper
  • ¼ tsp salt

FOR THE QUESADILLAS:

  • 4 large flour tortillas
  • 2 cups Mexican Cheese Blend
  • ½ cup cherry tomatoes
  • ½ cup canned fire-roasted corn kernels
  • ½ cup canned black beans, drained
  • ½ an avocado, diced

FOR GARNISH:

  • Limes wedges
  • Fresh minced cilantro

 

Instructions:

  1. Set the oven to 425°F. Put some parchment paper in the preparation of a baking sheet.
  2. Combine the salt and all of the seasonings for the steak in a small bowl. generously sprinkle spice mixture on steak.
  3. In a big skillet, heat 2 tablespoons of olive oil on medium-high. steak for no longer than three minutes on each side. Make sure it’s simply a sear because the steak will cook more in the oven! While preparing the quesadillas, remove them from the heat and allow stand for five minutes.
  4. On the prepared sheet, spread 12 cups of cheese over each of the 2 tortillas.
  5. Add avocado, tomatoes, corn, black beans, and other toppings.
  6. Slice the meat against the grain very thinly. Top the stuffed tortillas with slices.
  7. Add the remaining cheese evenly to two quesadillas, then top with the remaining tortillas.
  8. Bake for 6 to 8 minutes in the oven, or until cheese is melted and tortillas are thoroughly heated.
  9. Slice as desired after taking it out of the oven. Serve with lime wedges, a dollop of sour cream, your preferred salsa and guacamole, cilantro on top, and these other ingredients!
