Bites of cucumber and tomato with a creamy parmesan herb sauce

Every party will love these crisp, fresh cucumber nibbles with a wonderful garlic-herb cream! They are incredibly simple to make, vibrant, and ideal for any event, from Christmas to backyard barbecues.

Total Time: 50 minutes

Ingredients:

For assembly and garnish:

  • 2 cucumbers
  • 1-pint cherry or grape tomatoes
  • 1 bunch curly parsley

For the herb spread:

  • 2 (8 oz.) packages of cream cheese
  • 1/4 cup sour cream
  • 1/4 cup minced fresh flat-leaf parsley
  • 2 cloves garlic
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • 2 tsp dill weed
  • 1/2 tsp kosher salt
  • 1/2 cup freshly grated Parmesan

 

Instructions:

  1. Beat all of the herb spread’s components in a sizable mixing bowl with an electric mixer until they are smooth and creamy. While you prepare the tomatoes and cucumbers, set aside.
  2. Use a melon baller to carefully hollow out a small scoop from each cucumber slice. On top of the cucumber slices, spoon some herb spread. Alternatively, use a large tip pastry bag equipped with herb spread and pipe it on top. One tomato half and a single curly parsley leaf should be placed on top of each bite.
  3. Refrigerate with a cover until ready to serve.
  4. Enjoy!
