Lemon Coconut Cake

You will not be satisfied with eating it! Lemon coconut cake is the ideal fusion of mouthwatering tastes and a tender texture. This cake is quite tasty and so nice since it is moist and covered with flaked coconut.

Ingredients:

FOR THE CAKE:

  • 5 large egg whites, room temperature
  • ¾ cup milk
  • ¾ cup unsalted butter, softened
  • 1 ¾ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • 2 ½ cup cake flour
  • 1 Tbps baking powder
  • ½ tsp kosher salt
  • 1 cup shredded, sweetened coconut

FOR THE FROSTING:

  • ½ cup unsalted butter, softened
  • 2 packages cream cheese, softened
  • 6 cups powdered sugar
  • ¼ cup heavy cream
  • 1 tsp vanilla extract
  • 2 cups shredded, sweetened coconut
  • 2 cups lemon curd

 

Instructions:

FOR THE CAKE:

  1. In a small bowl, whisk ½ cup of the milk with the egg whites until lightly blended.
  2. Beat butter, sugar, vanilla, and almond extracts for 2 minutes on medium speed in a mixing bowl. Then mix the dry ingredients with it until blended. Beat the egg whites until completely combined. Then add the remaining milk and whisk for 3-4 minutes, scraping the sides of the bowl. Fold in the coconut.
  3. Spray a cake pan with baking spray. Then pour the mixture and bake in a 350 degree oven for 26 to 28 minutes. Once cooked, remove and cool completely on a wire rack.

FOR THE FROSTING:

  1. Beat butter and cream cheese for 3-4 minutes using an electric mixer. Then add the powdered sugar, vanilla and heavy cream and beat for an additional 4-5 minutes.
  2. To assemble, place one cake layer on a cake stand. Add a cup of lemon curd and spread it on the cake. Then add a generous amount of icing cream on top and smooth it with a flat spoon. Put the other layer of cake. Place the second cup of lemon curd on top. Then add the icing to the entire cake and then add the coconut to the top and sides of the cake. Fill your hand with coconut and gently press the sides of the cake. Repeat until the required amount of coconut is placed. Enjoy!
