Pineapple Dream Dessert

One of my all-time favorite desserts: Pineapple Dream is one of those sweets that is ideal for a potluck. It’s a delicious combination of cream cheese, pineapple, whipped cream, and graham crackers. It’s quite simple to prepare and may be prepared ahead of time.

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes

Ingredients:

Crust:

  • 2 1/2 cups graham crumbs 2 sleeves
  • 1/2 cup unsalted butter

Layers:

  • 4 oz cream cheese softened
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter softened
  • 8 oz Cool Whip
  • 20 oz crushed pineapple

 

Instructions:

  1. The oven should be hot at 300 degrees Fahrenheit.
  2. Allow butter to cool once it has been melted in the microwave. Toss the crumbs with the butter until everything is well incorporated. Bake for 8-10 minutes, pressing 2 cups of the crumb mixture firmly into a 9×9 square pan.
  3. Cream together the cream cheese and butter until smooth. Reduce the mixer’s speed to low and gradually add the powdered sugar, one cup at a time, until the mixture is completely blended. Increase the volume and hit the drums hard for roughly a minute. Mix in a heaping tablespoon of the drained pineapple using a rubber spatula. Spread the cream cheese and pineapple filling on top of the crust.
  4. Spread the leftover pineapple on top of the cream cheese mixture after folding it in the Cool Whip. Scatter the remaining graham cracker crumb mixture on top. Refrigerate for at least 4 hours, if not longer.
