Pecan Pie Brownies

These are not the desserts for you if you prefer cakey brownies. In fact, these brownies are thick, moist, and gooey throughout—a really indulgent treat for both chocolate and pecan pie fans.

These rich, flavorful brownies are made by baking a sheet of thick, chocolatey brownies, then topping it with a layer of pecan pie filling that has been lightly bourbon-infused.

Ingredients:

Brownie Batter:

  • 1/2 cup unsalted butter
  • 2 cups chocolate chips
  • 3/4 cup brown sugar
  • 3/4 cup granulated sugar
  • 4 eggs
  • 1 tsp vanilla
  • 1/2 tsp kosher salt
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour

Pecan Pie Topping:

  • 1 cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt
  • 1/4 cup melted butter
  • 1/2 tsp bourbon (optional)
  • 3 cups chopped pecans

 

Instructions:

  1. Set the oven to 325 F. Cooking spray should be used to grease and parchment paper to line the bottom of a baking pan.
  2. How to Make Brownie Batter Butter should be melted over medium-high heat. Remove butter from the heat after it starts to boil, then whisk in the chocolate chunks to coat. 5 minutes should pass after which the ingredients should be thoroughly blended. Combine brown sugar, granulated sugar, eggs, vanilla, salt, and other ingredients in a sizable mixing basin. Add the chocolate mixture and blend by whisking. Flour and cocoa powder should be sifted into the wet ingredients and gently combined. Bake for 35 minutes, or until a toothpick inserted in the center comes out clean, after pouring the batter into the prepared pan.
  3. While the brownies are baking, prepare the pecan pie topping by whisking the brown sugar, eggs, vanilla, salt, and melted butter until the sugar is completely dissolved. Add pecans and stir; put aside.
  4. Pour the pecan mixture over the brownies after they have finished baking, then spread it out evenly with a spoon. Once the Pecan Pie Topping is set, put the pan back in the oven for another 25 minutes. Prior to slicing, it to cool completely.
