Easy Mushroom Rice Pilaf

Ingredients:

  • 1 cup dried mushrooms
  • 1 cup Long Grain Rice
  • 3 cups boiling water
  • 2 tablespoons butter
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 lb fresh mushrooms sliced
  • 3 tablespoons parsley chopped
  • Salt and Pepper to taste

 

Instructions:

  1. The dried mushrooms should first be soaked in three cups of boiling water until they are soft.
  2. Drain the mushrooms after they reach the required level of tenderness, saving the liquid for stock. You’ll require two cups. Whenever necessary, top off with stock or water. Set aside after slicing into bite-sized pieces.
  3. At medium heat, butter should be melted. Include the onions when they are ready. Add the garlic and give it one more minute.
  4. When the fresh mushrooms are done, add the mushrooms and continue to sauté. Cover the rice with the mixture after adding it.
  5. Salt, pepper, and the stock should all be added. When the rice is soft and has completely absorbed the stock, bring to a boil, cover, and simmer for 15 to 20 minutes.
