Blueberry Cookies

Showcase the incredible flavor of blueberries as they enter season with a few of my favorite dishes!

These blueberry cookies have an amazing flavor combination of ripe blueberries, white chocolate, and tangy lemon. This is a summer cookie recipe you won’t want to miss because it is colorful, juicy, and delicious.

Total Time: 30 minutes

Ingredients:

  • 1 Cup Unsalted Butter Softened
  • 1 ½ Cup Fresh Blueberries
  • ¾ Cup White Chocolate Chips
  • ¾ Cup Brown Sugar
  • 1 Cup Granulated Sugar
  • 2 Eggs
  • 2 Tsp Vanilla Extract
  • 2 Tsp Lemon Zest
  • 3 ½ Cups Flour
  • 1 Tsp Baking Soda
  • ½ Tsp Baking Powder
  • 1 Tsp Salt

 

Instructions:

  1. Put two baking sheets in the oven and preheat it to 350 degrees. Place aside.
  2. The butter and both sugars should be creamed for about 3 minutes in a large bowl until light and fluffy. Beat in the eggs, vanilla, and lemon zest after adding them.
  3. Mix till mixed after adding the flour, baking soda, baking powder, and salt. Hand-stir the chocolate chips and blueberries in.
  4. Scoop out the dough and drop it onto the baking pans, spacing each cookie about 2 inches apart, using a 1 inch cookie scoop. Bake the edges for 7-8 minutes, until they are barely beginning to brown.
  5. After removing from the oven, let the baking sheet cool for two minutes before moving it to a cooling rack to finish cooling.
