Easy Corn Fritters

Corn fritters are extremely simple to make when lightly cooked! Lots of fresh corn kernels are combined with some cheese and a spicy jalapeno spice in these delectable corn fritters. They are warmly served after being lightly cooked till crisp and golden. Quick, simple, and difficult to resist

Prep Time: 10 minutes
Cook Time: 8 minutes
Total Time: 18 minutes

Ingredients:

  • 2 cups corn
  • â…“ cup all-purpose flour
  • ¼ cup cornmeal
  • 1 egg
  • 1 green onion chopped
  • 1 tablespoon jalapeno minced
  • â…› teaspoon smoked paprika
  • ½ cup Monterey jack cheese
  • ¼ cup milk
  • 2 tablespoons oil
  • salt & pepper to taste

 

Instructions:

  1. In a bowl, mix the flour, cornmeal, egg, onion, and smoked paprika. To taste, add salt. Combine cheese and corn.
  2. If more milk is required to create a moist mixture that can maintain its shape, add it gradually. Perhaps not all of the milk is necessary.
  3. In a big skillet, heat the oil over medium heat. Using a spatula, gently press 2-3 tablespoons of the corn mixture over the hot oil.
  4. Cook for an additional 3 to 4 minutes after flipping, or until golden.
  5. To serve, sprinkle sour cream on top.
