Ingredients:
Chicken Cobb Salad Ingredients:
- 6 oz bacon
- 1 medium head romaine lettuce
- 2 cooked chicken breasts
- 2 hard-boiled eggs
- 1 large avocado, sliced
- 1 cup cherry tomatoes
- 1/2 cup red onion
- 1/2 cup blue cheese
- 2 Tbsp parsley
Cobb Salad Dressing:
- 3 Tbsp balsamic vinegar
- 1 Tbsp dijon mustard
- 1 garlic clove
- 1/3 cup olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions:
- Cook chopped bacon in a skillet over medium heat for 5 minutes or until crisp, then transfer to a plate lined with paper towels to cool. Peel and quarter two hard-boiled eggs after cooking.
- Place the chopped, rinsed, and dried romaine lettuce in a platter. Then, top the salad with the finely chopped parsley. Arrange the other salad ingredients (chicken, eggs, avocado, tomatoes, onion, blue cheese, and bacon) in rows over the salad.
- Add the dressing ingredients to a mason jar, then vigorously shake. Just before serving, drizzle over the salad, or let guests to add their own amount of dressing.
