I was given this recipe, and I keep passing it along to everyone who tries it! It’s not only incredibly tasty, but it’s also so adaptable that I’ve served it as a side dish for steak! This can be prepared the night before and baked the next day allowing an additional 10 minutes for cooking.
Prep Time: 30 minutes
Cook Time: 1 Hour
Total Time: 1 Hour 30 minutes
Ingredients:
- 4 pounds of potatoes, skinned
- 1 pound processed cheese food, cubed
- 1 pound bacon, cooked crisp and chopped
- 2 cups mayonnaise
- 1 onion, finely chopped
Instructions:
- Preheat the oven to 350 degrees F (175 degrees C).
- Put the potatoes in a big pan, cover with water, and bring to a boil. Cook potatoes just until they are tender. Place drained food in a big bowl. Without crushing the potatoes, gently toss in the cheese while the potatoes are still hot. Once the cheese has melted, keep stirring every few minutes.
- Combine mayonnaise, onion, and bacon in a separate bowl. Cheese and potatoes are gently mixed together. Into a 13×9-inch baking dish, spread.
- Bake for 50 minutes in a preheated oven.
