Brunch Potato Casserole

I was given this recipe, and I keep passing it along to everyone who tries it! It’s not only incredibly tasty, but it’s also so adaptable that I’ve served it as a side dish for steak! This can be prepared the night before and baked the next day allowing an additional 10 minutes for cooking.

Prep Time: 30 minutes
Cook Time: 1 Hour
Total Time: 1 Hour 30 minutes

Ingredients:

  • 4 pounds of potatoes, skinned
  • 1 pound processed cheese food, cubed
  • 1 pound bacon, cooked crisp and chopped
  • 2 cups mayonnaise
  • 1 onion, finely chopped

 

Instructions:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Put the potatoes in a big pan, cover with water, and bring to a boil. Cook potatoes just until they are tender. Place drained food in a big bowl. Without crushing the potatoes, gently toss in the cheese while the potatoes are still hot. Once the cheese has melted, keep stirring every few minutes.
  3. Combine mayonnaise, onion, and bacon in a separate bowl. Cheese and potatoes are gently mixed together. Into a 13×9-inch baking dish, spread.
  4. Bake for 50 minutes in a preheated oven.
