Breakfast Cups Recipe

This is a productive way to start the day. Just allow yourself an hour or so. They are versatile and filling. Children can also contribute in some ways.

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients:

  • cooking spray
  • 18 refrigerated biscuits
  • 8 ounces breakfast sausage
  • 7 large eggs
  • ½ cup milk
  • salt and ground black pepper
  • 1 cup mild shredded Cheddar cheese

 

Instructions:

  1. Set oven to 400 degrees Fahrenheit. Cooking spray should be used to grease 18 muffin tins.
  2. On a lightly dusted surface, roll out the biscuit dough and cut 5-inch rounds. To create a dough cup, press the base and sides of each round into the prepared muffin cups.
  3. Sausage should be cooked thoroughly and browned in a skillet over medium-high heat, for about 5 to 10 minutes; drain grease. Sausage is placed into dough cups.
  4. In a bowl, combine the eggs, milk, salt, and pepper and beat well. Fill each dough cup with the egg mixture so that it is just below the top of the biscuit dough. Cheddar cheese is added on top of the egg mixture.
  5. Bake in the preheated oven for 18 minutes, or until the biscuit dough is brown.
