Smoked Sausage and Potatoes Skillet

Ingredients:

  • 14 oz. smoked sausage
  • 1 Tbsp butter
  • 1 lb baby gold potatoes
  • 1 red bell pepper, sliced
  • 1 orange bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp pepper

 

Instructions:

  1. On a microwave-safe plate, microwave the baby gold potatoes in a single layer. You should microwave the potatoes for 2 minutes or so on each side, depending on their size. When ready, the baby gold potatoes should be soft and readily punctured with a fork. When the potatoes have cooled, dice them.
  2. Put a skillet with an inch of water in it. For about 8 minutes, cook whole sausage links in a pan over medium heat. To brown the sausage evenly on both sides, flip it halfway through. Remove it from the skillet, then set it aside. Slice the sausage after it has cooled.
  3. To the skillet, add butter, garlic, cubed potatoes, onions, and peppers. Add salt and pepper, then simmer for 10 minutes over medium heat.
  4. Add the sausage slices back to the skillet after the potatoes, onions, and peppers are cooked through. To reheat the sausage and combine the flavors, cook everything in the skillet for another 3 minutes.
