Beer Cheese Dip

Ingredients:

  • 4 Tbsp butter
  • 1/4 cup all-purpose flour
  • 1/2 Tbsp mustard
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/4 tsp onion powder
  • 1/2 cup beer lager
  • 1 tsp Worcestershire sauce
  • 1 cup milk
  • 1/2 cup Colby jack cheese
  • 1/2 cup Gruyere
  • 1 cup sharp cheddar

 

Instructions:

  1. To make a roux, melt the butter in a saucepot and stir in the flour.
  2. Whisk together all of the spices.
  3. Slowly pour the beer into the roux while whisking constantly. Drizzle in the milk slowly while whisking to keep the mixture thickened.
  4. Allow the cheeses to melt before adding the shredded cheese, commencing with cubes or slices if using.
  5. Serve with soft pretzels once all of the cheese has melted.
