Air Fryer Eggplant Parmesan


Air Fryer Eggplant Parmesan is one of those foods that could be the tastiest snack or side dish you’ve ever had!

Air-fried to crispy perfection, lightly seasoned and breaded slices of eggplant are served alone or with your favorite dip or sauce! This simple but tasty dish will be difficult to resist.

  • 1 large eggplant or two small
  • ⅔ cup seasoned bread crumbs
  • 2 tablespoons parmesan cheese grated
  • 1 teaspoon Italian seasoning
  • ¼ teaspoon garlic powder
  • ¼ cup flour
  • 2 eggs beaten
  • 1 cup marinara sauce
  • 1 cup mozzarella cheese shredded
  • fresh basil or parsley for garnish optional



  1. Preheat the air fryer to 380 degrees F.
  2. Dry the eggplant slices with a paper towel after slicing them into 12″ slices.
  3. In a medium mixing bowl, combine bread crumbs, parmesan cheese, Italian seasoning, and garlic powder.
  4. In a separate bowl, combine the flour and the whisked eggs.
  5. The eggplant slices should be floured first, then dipped in the egg, and then into the bread crumb mixture.
  6. Spray each side of the eggplant with cooking spray before placing it in the air fryer basket in a single layer.
  7. Cook for 5 minutes on one side, then flip and cook for another 4-5 minutes on the other.
  8. Cook for 2-3 minutes, or until the shredded cheese is melted, on top of the marinara sauce.
  9. Serve with more sauce if preferred and garnished with fresh parsley or basil.
