Crispy Coconut Shrimp

Easy appetizers, especially those that can be made ahead of time, are our favorites. Crispy Coconut Shrimp is a family favorite that has large shrimp wrapped in a delicious coconut breading and fried crispy and golden brown.

With a tangy dip or sauce, serve coconut shrimp as a party appetizer, side dish, or just a fun snack.

Ingredients:

  • 1 pound large shrimp peeled & deveined
  • 2 eggs
  • 1 cup sweetened flaked coconut
  • 1 cup panko bread crumbs
  • ½ cup cornstarch
  • ½ teaspoon salt
  • â…› teaspoon cayenne pepper
  • cooking spray

 

Instructions:

  1. In a small bowl, combine cornstarch, salt, and cayenne pepper. In a separate bowl, beat the egg.
  2. Pulse the coconut in a food processor until it has a finer texture (or chop it with a knife). You don’t want it to be too fine; just a little bit broke up. Toss in the bread crumbs.
  3. Dredge the shrimp in the cornstarch mixture and shake off any excess. Dip in the egg, then press into the coconut mixture to adhere. Cooking spray should be used.
  4. Bake the shrimp for 8 minutes on a parchment-lined baking sheet. Bake for an additional 5- 10 minutes, or until shrimp are cooked through. If desired, broil for 1 minute.
  5. Serve with a sweet chili dip while it’s still warm.
