Ingredients:
- 1 pound large shrimp peeled & deveined
- 2 eggs
- 1 cup sweetened flaked coconut
- 1 cup panko bread crumbs
- ½ cup cornstarch
- ½ teaspoon salt
- â…› teaspoon cayenne pepper
- cooking spray
Instructions:
- In a small bowl, combine cornstarch, salt, and cayenne pepper. In a separate bowl, beat the egg.
- Pulse the coconut in a food processor until it has a finer texture (or chop it with a knife). You don’t want it to be too fine; just a little bit broke up. Toss in the bread crumbs.
- Dredge the shrimp in the cornstarch mixture and shake off any excess. Dip in the egg, then press into the coconut mixture to adhere. Cooking spray should be used.
- Bake the shrimp for 8 minutes on a parchment-lined baking sheet. Bake for an additional 5- 10 minutes, or until shrimp are cooked through. If desired, broil for 1 minute.
- Serve with a sweet chili dip while it’s still warm.
