If your family is like mine, you eat a lot of potato salads. Like out-ofthis-world, too much potato salad kind of a lot. But I made this one and now everyone calls me a hero. I guess that’s what happens when you learn to cook the perfect traditional American potato salad recipe.
Prep Time: 15 minutes
Cook Time: 20 minutes
Chill Time: 2 Hours
Total Time: 2 Hours 35 minutes
Ingredients:
- 2 ½ pounds of potatoes
- 6 hard-boiled eggs
- 1 cup celery
- ½ cup radishes
- 2 green onions
- Paprika
Dressing:
- ¾ cup mayonnaise
- ¼ cup relish
- 2 tbsp cider vinegar
- 1 tbsp dijon or yellow mustard
- 1 tsp sugar
- salt & pepper to taste
Instructions:
- Boil the potatoes until they are soft in salted water (approx. 15 minutes). Allow to cool completely.
- In a large mixing bowl, combine all of the dressing ingredients. Toss in the remaining ingredients thoroughly. (To make it creamy, I slightly mashed part of the potatoes while combining.)
- Before serving, chill for at least two hours.
