Ingredients:
Fajita Marinade Ingredients:
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1 Tbsp cajun spice
- 1 Tbsp lime juice, from 1/2 lime
- 1/2 tsp salt
Shrimp Fajita Ingredients:
- 1 lb large shrimp
- 1/2 medium onion, sliced
- 2 bell peppers sliced
- 1/4 cup cilantro, chopped
- 2-3 tsp lemon juice
To serve:
- 8 small flour tortillas
- 1 avocado, sliced
- Jalapeno Ranch
- 1 lime, cut into wedges
Instructions:
- Combine the following ingredients in a small basin to make the marinade: 1 tbsp lime juice (from 1/2 lime), 1 tbsp cajun spice, 1/2 tsp salt, 1/4 cup olive oil, 4 garlic cloves, minced
- In a medium mixing bowl, slice bell peppers and onions to the same 1/3″ thickness. Half of the marinade should be poured over the top, then toss to incorporate.
- Pat the shrimp dry with a paper towel in a second medium bowl, then add the remaining half of the marinade and mix to blend.
- Heat 1/2 Tbsp oil in a large heavy skillet over medium heat, then add shrimp in a single layer and fry for 1-2 minutes per side, or until cooked through and no longer translucent, then transfer to a platter.
- Add the marinated veggies to the same pan and cook, stirring periodically, until soft and golden brown around the edges (10 minutes), then remove from the heat.
- Return the shrimp to the pan with 1/4 cup chopped cilantro. Toss the ingredients together with a squeeze of fresh lime juice to taste. Serve fajitas with warmed or toasted tortillas* and your favorite sauce, such as jalapeño ranch.

Wrap a stack of 5 tortillas in moist paper towels and warm in the microwave for 30 seconds at a time until warm.
