Perfect Summer Fruit Salad

The ideal fruit salad for any event or backyard barbecue. Never are there any leftovers! One of my favorite fruit salad dishes, in my opinion, because of the sauce. The more time you give this salad to absorb its juices, the better it will taste. Before serving, I like to let it sit in the fridge for 3 to 4 hours. Enjoy.

Cook Time: 5 minutes
Additional Time: 2 hours
Total Time: 3 hours 30 minutes

Ingredients:

  • â…” cup fresh orange juice
  • â…“ cup fresh lemon juice
  • â…“ cup packed brown sugar
  • ½ teaspoon grated orange zest
  • ½ teaspoon grated lemon zest
  • 1 teaspoon vanilla extract
  • 2 cups cubed fresh pineapple
  • 2 cups strawberries, hulled and sliced
  • 3 kiwi fruit, peeled and sliced
  • 3 bananas, sliced
  • 2 oranges, peeled and sectioned
  • 1 cup seedless grapes
  • 2 cups blueberries

 

Instructions:

  1. In a saucepan over medium-high heat, bring orange juice, lemon juice, brown sugar, orange zest, and lemon zest to a boil. Reduce heat to medium-low, and simmer for 5 minutes or until slightly thickened. After taking the pan off the heat, add the vanilla extract.
  2. In a big, transparent glass bowl, arrange the fruit in the following order: blueberries, bananas, oranges, pineapple, strawberries, and kiwi fruit. Over the fruit, pour the cooled sauce. Before serving, cover and chill the food for three to four hours.
