The Pioneer Woman’s Blackberry Cobbler

An easy and delicious Blackberry Cobbler recipe from The Pioneer Woman, takes only 5 ingredients and 10 minutes to prepare. Sweet, juicy filling and a crunchy golden crust!

Ingredients:

  • 1 1/4 cups + 2 tablespoons sugar, separated
  • 1 cup flour
  • 1 cup whole milk, see notes
  • 1/2 stick butter, melted
  • 400g fresh or frozen blackberries, washed and dried.
  • Vanilla ice cream, for serving

 

Instructions:

  1. Note: If you are using frozen berries, be sure to add them when they are frozen. If you allow them to thaw, they will become mushy and the consistency will be off.
  2. Heat the oven to 350 degrees.
  3. Combine 1 cup of sugar with 1 cup of flour in a large bowl.
  4. Add milk, then melted butter. Mix until well blended.
  5. Pour into bottom of a greased 9″ x 9″ baking dish.
  6. Distribute the berries all over the top. (It will sink in more while baking.) If desired, you can sprinkle more berries on top once you start baking and adjust to keep those berries near the top. About 30 minutes in.
  7. Sprinkle half a cup of sugar on top, reserving two tablespoons for later use.
  8. Bake for 50 minutes, then remove from the oven and sprinkle with 2 tablespoons of sugar.
  9. Bake for 10 minutes, or until top is golden brown.
  10. Serve immediately (with ice cream of course)

Notes:

*Although the original recipe called for whole milk, I used 1% before and the result was great.
