This side dish recipe for roasted fresh broccoli with garlic, lemon, and Parmesan cheese will undoubtedly be the best broccoli you’ve ever had.

A tasty side dish that is quick and simple to create and goes well with beef, chicken, or fish.

Total Time: 15 minutes

Ingredients:

  • 4 pounds broccoli
  • 4 garlic cloves peeled and sliced
  • Good olive oil or coconut oil
  • 1½ tsp kosher salt
  • ½ tsp freshly ground black pepper
  • 2 tsp grated lemon zest
  • 2 tbsp lemon juice
  • ⅓ cup grated Parmesan cheese

 

Instructions:

  1. Set the oven’s temperature to 400°F/200°C.
  2. Remove the broccoli florets from the thick stalks, keeping one or two inches of the stalk still attached, and discarding the remaining stalks. Pull the florets apart by cutting the larger parts through the base of the head with a small knife. 8 cups or so of florets should be sufficient.
  3. Put the broccoli florets on a sheet pan that can accommodate them all in one layer. Add five tablespoons of olive oil and the garlic to the broccoli. Add pepper and salt to taste.
  4. Roast the vegetables for 20 to 25 minutes, or until they are crisp-tender and some of the floret tips are browned.
  5. After taking the broccoli out of the oven, combine it with the Parmesan, 1 1/2 tablespoons of olive oil, lemon juice, and zest. Serve warm.
