Famous Carrot Cake


My Grandfather was famous for this cake. Everyone who knew him knows of his famous carrot cake. Anyone who wanted some could always get some from him. Although we will miss him, his carrot cake legacy will endure forever! Enjoy!

  • 3 eggs
  • ¾ cup buttermilk
  • ¾ cup vegetable oil
  • 1 ½ cup white sugar
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • ¼ tsp salt
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 cups shredded carrots
  • 1 cup flaked coconut
  • 1 cup chopped walnuts
  • 1 can crush pineapple (8 ounces)
  • 1 cup raisins



  1. Preheat the oven to 350 degrees Fahrenheit (175 degrees C). Flour and butter a pan.
  2. Flour, baking soda, salt, and cinnamon should all be combined in a medium bowl.
  3. Combine the eggs, buttermilk, oil, sugar, and vanilla in a big bowl. Mix well. Mix well after adding the flour mixture.
  4. Shredded carrots, coconut, walnuts, pineapple, and raisins should all be combined in a medium bowl.
  5. Adding the carrot combination to the batter, thoroughly fold it in using a large wooden spoon or a very powerful whisk.
  6. Pour the mixture into the 8×12-inch pan that has been prepared, and bake for one hour at 350°F (175°C). Examine with a toothpick.
  7. Before serving, let the food cool for at least 20 minutes.
