Avocado Chicken Salad Ingredients:
- 2 large cooked chicken breasts
- 2 large avocados
- 1 cup corn
- 6 oz lean bacon
- 1/4 cup green onion
- 2 Tbsp Dill
Lemon Dressing:
- 3 Tbsp lemon juice
- 3 Tbsp extra virgin olive oil
- 1 tsp sea salt, or to taste
- 1/8 tsp black pepper
Instructions:
- Place the 2 large cooked chicken breasts in a sizable mixing dish and chop or shred them.
- Add two large avocados to the mixing bowl after peeling and removing the pits.
- Add 1 cup of cooked corn (fresh corn is preferred), 1/4 cup finely chopped green onion, finely chopped bacon, and 2 tablespoons fresh dill.
- Mix the dressing ingredients in a small bowl after adding them. Give your salad a drizzle and toss to blend. If desired, garnish with slices of hard-boiled egg.
