Ingredients:
- 2 cups corn
- â…“ cup all-purpose flour
- ¼ cup cornmeal
- 1 egg
- 1 green onion chopped
- 1 tablespoon jalapeno minced
- â…› teaspoon smoked paprika
- ½ cup Monterey jack cheese
- ¼ cup milk
- 2 tablespoons oil
- salt & pepper to taste
Instructions:
- In a bowl, mix the flour, cornmeal, egg, onion, and smoked paprika. To taste, add salt. Combine cheese and corn.
- If more milk is required to create a moist mixture that can maintain its shape, add it gradually. Perhaps not all of the milk is necessary.
- In a big skillet, heat the oil over medium heat. Using a spatula, gently press 2-3 tablespoons of the corn mixture over the hot oil.
- Cook for an additional 3 to 4 minutes after flipping, or until golden.
- To serve, sprinkle sour cream on top.
