Zucchini Patties Recipe


This recipe for cheesy zucchini patties is a great way to use up farm zucchini in excess. Serve with a dollop of sour cream or tomato sauce on top.

  • 2 cups grated zucchini
  • ½ cup all-purpose flour
  • ½ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ¼ cup chopped onion
  • 2 eggs, beaten
  • 2 tbsp vegetable oil
  • salt to taste



  1. In a medium bowl, combine the zucchini, eggs, flour, Parmesan cheese, mozzarella cheese, onion, and salt. To equally spread the ingredients, stir thoroughly.
  2. Heat the oil in a skillet over a medium-high flame.
  3. Scoop tablespoonfuls of the zucchini mixture into the hot oil in batches and fry for 2 minutes on each side, or until golden brown.
