Ingredients:

  • 6 oz lasagna noodles
  • 1 medium onion, chopped
  • 1 tbsp olive oil
  • 2 garlic cloves, chopped
  • 1 lb Italian sausage (hot or sweet)
  • 1 tsp dried oregano
  • 2 tbsp tomato paste
  • 32 oz broth, (chicken or beef)
  • 15 oz canned crushed tomatoes
  • 1/2 cup fresh basil, chopped
  • 1/4 cup parmesan cheese, grated
  • 1/2 cup half & half
  • Ricotta cheese, for serving

 

Instructions:

  1. A big saucepan of salted water should be brought to a boil. Add the noodles and simmer for 2 minutes shorter than the box directions suggest. Drain the noodles and set them aside after drizzling them with oil.
  2. Cook the sausage in a heavy-bottomed saucepan or dutch oven over medium heat, breaking it up into small pieces with a spatula as it cooks. Cook, stirring frequently until the onion is transparent. Cook for 30 seconds, or until aromatic, after adding the squeezed garlic and oregano.
  3. Toss in the tomato paste, broth, and tomatoes from the can. Bring to a boil, then reduce to low heat and simmer for 15 minutes, partially covered.
  4. Stir in the noodles, half-and-half, parmesan, and basil while keeping the heat at a low simmer. Season to taste after a few more minutes of simmering.
  5. Serve immediately with a dollop of ricotta and a sprinkling of fresh basil.
