Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Ingredients:
- 2 pounds hanger steak
- 6-8 tortillas warmed
- 1 red pepper
- 1 green or yellow pepper
- 1 medium onion
- 3 tbsp olive oil
- 1 tbsp lime juice
- 1/2 tsp chili powder
- 1 tsp ground cumin
- pinch cayenne pepper
- 1/2 tsp Kosher salt
- 1/2 tsp fresh ground black pepper
- 2 cloves garlic minced
Instructions:
- Put the meat in a bag that can be sealed.
- Put the onion and peppers in a separate, sealable bag.
- In a jar with a screw top or tight fitting cover, combine the olive oil, lime juice, chili powder, ground cumin, cayenne pepper, salt, black pepper, and garlic. Shake to thoroughly mix. Pour one-third of the marinade over the steak, one-third over the vegetables, and save the remaining marinade in the jar for when the steak fajitas are being cooked.
- Place the bags in the refrigerator for up to a day after carefully sealing them.
- Heat a sizable skillet over medium-high heat when you’re ready to cook. Cook the vegetables in the skillet for about 5 minutes, or until they are crisp-tender but still firm.
- Add steak strips to the same skillet after removing the veggies to a platter. Add the vegetables back to the skillet along with the marinade that was set aside once the steak is fully cooked (approximately 7 to 10 minutes).
- Serve with warm tortillas and any extra garnishes of your choosing.
