Total Time: 50 minutes
Ingredients:
For assembly and garnish:
- 2 cucumbers
- 1-pint cherry or grape tomatoes
- 1 bunch curly parsley
For the herb spread:
- 2 (8 oz.) packages of cream cheese
- 1/4 cup sour cream
- 1/4 cup minced fresh flat-leaf parsley
- 2 cloves garlic
- 1 tsp onion powder
- 1/2 tsp paprika
- 2 tsp dill weed
- 1/2 tsp kosher salt
- 1/2 cup freshly grated Parmesan
Instructions:
- Beat all of the herb spread’s components in a sizable mixing bowl with an electric mixer until they are smooth and creamy. While you prepare the tomatoes and cucumbers, set aside.
- Use a melon baller to carefully hollow out a small scoop from each cucumber slice. On top of the cucumber slices, spoon some herb spread. Alternatively, use a large tip pastry bag equipped with herb spread and pipe it on top. One tomato half and a single curly parsley leaf should be placed on top of each bite.
- Refrigerate with a cover until ready to serve.
- Enjoy!
