After trying this simple (and forgiving) meal at a potluck and being pleasantly surprised by its simplicity, I persuaded the creator to share it with me. A tasty summer side dish for anything grilled, smoked, or barbecued just requires a few ingredients, especially if the squash is homegrown!
Prep Time: 20 minutes
Cook Time: 1 Hour 15 minutes
Total Time: 1 Hour 35 minutes
Ingredients:
- 3 pounds yellow summer squash,
- ½ cup dry bread crumbs
- ½ cup chopped onion
- 2 eggs
- ¼ cup butter, melted
- 1 tbsp white sugar
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup butter, melted
- ¼ cup dry bread crumbs
Instructions:
- Set the oven to 375 degrees Fahrenheit (190 degrees C). In a 2-quart baking dish, grease it.
- Place the squash in a big pot, add water to cover, and boil for about 15 minutes or until tender. The squash should be thoroughly drained, added to a large mixing dish, and mashed until somewhat chunky. Spread the mixture into the prepared baking dish after thoroughly combining the onion, eggs, 1/4 cup butter, sugar, salt, and pepper. 1/4 cup of melted butter should be drizzled over the casserole’s top before 1/4 cup of bread crumbs are added.
- Bake in the preheated oven for approximately an hour, or until the top is golden brown and the dish is thoroughly heated through.
