Ham Breakfast Hash

The ultimate morning hash with eggs is made with tender potatoes and smokey ham! Unlike other hash recipes, this recipe is made in one pot so there’s no need to deal with a separate bowl and stovetop. The potatoes are cooked in an oven until fork tender and then combined with ham, eggs, spices, and cheese!

Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients:

  • 4 cups hash browns
  • 4 eggs
  • 2 tbsp olive oil
  • ½ cup onion diced
  • 1 ½ cups leftover ham diced
  • ½ green pepper finely diced
  • ¼ cup cheddar cheese shredded
  • salt and pepper to taste

 

Instructions:

  1. Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius).
  2. In an ovenproof skillet, heat the olive oil over medium heat. Cook, stirring periodically, for about 5 minutes, or until the onion is softened.
  3. Combine hash browns, ham, and green peppers in a mixing bowl. Cook, tossing periodically until the hashbrowns are gently browned.
  4. To make four wells in the hashbrowns, press the back of a spoon into them. In each well, crack a fresh egg. Season with salt and pepper to taste, then top with cheese.
  5. Preheat the oven to 350°F and bake the eggs for 12-15 minutes, or until done to your liking.
