This recipe came from my grandmother’s cookbook. This was a family favorite, judging by the aged appearance of the recipe card. I’m not a huge pancake guy but these are definitely some of the best pancakes I’ve had. I made them for my kids and they all gobbled them up like Homer Simpson at the donut shop. They’re so fluffy and light! Give them a try; you won’t regret it!

Total Time: 20 minutes
Ingredients:
- 1 ½ cups all-purpose flour
- 1 egg
- 3 tablespoons butter, melted
- 3 ½ teaspoons baking powder
- 1 tablespoon white sugar
- 1 ¼ cups milk
- ¼ teaspoon salt, or more to taste
Instructions:
- In a large mixing bowl, combine together the flour, baking powder, salt, and sugar. Make a well in the center of the bowl and add the milk, egg, and melted butter ; whisk until smooth.
- Over medium-high heat, lightly oil a griddle or frying pan.
- Pour or scoop about a quarter cup of batter per pancake onto the griddle. Serve quickly after browning both sides.
