Ingredients:
- 3 cups potatoes
- 1 lb smoked sausage
- 4 tbsp butter
- 4 tbsp flour
- 2 cups half & half or milk
- salt & pepper to taste
- 1/2 lb Velveeta cheese cubed
- 1/2 cup cheddar cheese
- 1/4 tsp smoked paprika
Instructions:
- Sauté the sausage in a sizable skillet with 1-2 tablespoons of olive oil over medium-low heat, tossing and swirling until they’ve begun to brown.
- Apply nonstick cooking spray sparingly to a baking dish. While distributing them evenly, add the cooked potatoes and sausage to a casserole dish.
- Add the butter to the skillet and raise the heat to medium. Stir in the flour after it has melted. To get rid of the floury flavor, heat it for about a minute while whisking continuously. Half-and-half should be added gradually, 1/4 to 1/2 cup at a time, while constantly whisking to ensure level distribution. Cooking should go on until it thickens.
- When the Velveeta is entirely melted and the sauce is smooth, mix in the paprika, salt, and pepper.
- Over the potatoes and beef, evenly distribute the cheese sauce. Sprinkle the grated cheese evenly over top.
- Bake the casserole at 350 degrees for 35 to 45 minutes, or until the top is golden brown and the potatoes are soft to the fork.
