Equipment

  • Large Mixing Bowl
  • 9x13 inch baking dish
  • Mixing spoon
  • Measuring Cups and Spoons

Ingredients

  • 1 32 oz. package frozen hash browns, thawed
  • 1 10.75 oz. can cream of chicken soup (or cream of mushroom for a vegetarian option)
  • 2 cups shredded cheddar cheese
  • 1/2 cup butter melted
  • 1 16 oz. container sour cream
  • 1/2 cup chopped onions
  • Salt and pepper to taste
  • 2 cups crushed corn flakes
  • 1/4 cup melted butter for topping

Instructions

  • Preheat Oven: Begin by preheating your oven to 350°F (175°C).
  • Mix Ingredients: In a large bowl, combine the thawed hash browns, cream of chicken soup, shredded cheddar cheese, 1/2 cup melted butter, sour cream, chopped onions, and salt and pepper. Stir everything until well mixed.
  • Prepare Baking Dish: Grease a 9x13 inch baking dish. Spread the hash brown mixture evenly into the dish.
  • Add Topping: In a separate bowl, mix the crushed corn flakes with 1/4 cup melted butter. Sprinkle this mixture over the top of the hash browns evenly.
  • Bake the Casserole: Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the casserole is bubbly and the top is golden brown.
  • Rest and Serve: Once done, remove the casserole from the oven and let it sit for a few minutes before serving. This allows the casserole to set and makes it easier to serve.

Serving Suggestions:

  • Serve hot as a main dish or a side dish.
  • Pair with a simple green salad or steamed vegetables for a balanced meal.
  • Ideal for brunch, potlucks, or a comforting family dinner.

Notes

  • For a lighter version, use low-fat sour cream and reduced-fat cheese.
  • The casserole can be prepared a day ahead and refrigerated; add the topping just before baking.
  • Leftovers can be stored in the refrigerator for up to 4 days and reheated in the microwave or oven.
