  • 1 medium onion finely chopped
  • 2 large eggs
  • 3/4 cup breadcrumbs Panko or regular
  • 1/3 cup milk
  • 3 tablespoons ketchup
  • 3 tablespoons fresh parsley finely chopped
  • 1 ½ teaspoons salt
  • 1 ½ teaspoons Italian seasoning
  • ¼ teaspoon ground black pepper
  • ½ teaspoon ground paprika

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions
 

Preheat the Oven and Prepare the Pan:

  • Preheat your oven to 375°F (190°C).
  • Line a 9x5 inch loaf pan with parchment paper for easy removal, or grease it lightly.

Mix the Meatloaf Ingredients:

  • In a large bowl, combine ground beef, chopped onion, eggs, breadcrumbs, milk, ketchup, parsley, salt, Italian seasoning, black pepper, and paprika.
  • Mix gently with your hands or a fork just until combined. Avoid overmixing to prevent the meatloaf from becoming tough.

Shape and Bake the Meatloaf:

  • Transfer the mixture to the prepared loaf pan. Press it down and shape it evenly.
  • Bake in the preheated oven for 40 minutes.

Prepare the Glaze:

  • While the meatloaf is baking, mix together ketchup, brown sugar, apple cider vinegar, garlic powder, and onion powder in a small bowl.

Glaze and Finish Baking:

  • After 40 minutes, remove the meatloaf from the oven and spread the glaze over the top.
  • Return to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (71°C).

Rest and Serve:

  • Let the meatloaf rest for 10 minutes after baking. This allows the juices to redistribute.
