Ingredients
  

  • 1 large head of cauliflower
  • 2 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup marinara sauce for dipping
  • Optional toppings: mini pepperoni chopped vegetables, extra cheese

Instructions
 

Preheat Oven and Prepare Baking Sheet:

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or a silicone baking mat.

Rice the Cauliflower:

  • Wash and dry the cauliflower. Cut it into florets.
  • Pulse the florets in a food processor until they resemble rice.

Cook the Cauliflower:

  • Place the riced cauliflower in a microwave-safe bowl and microwave for 4-5 minutes or until soft.
  • Let it cool for a few minutes.

Drain the Cauliflower:

  • Transfer the cooked cauliflower to a clean kitchen towel or cheesecloth.
  • Squeeze out as much liquid as possible.

Mix the Ingredients:

  • In a large bowl, combine the drained cauliflower, eggs, mozzarella, Parmesan, Italian seasoning, garlic powder, salt, and pepper.
  • Mix well until everything is thoroughly combined.

Shape the Bites:

  • Take a spoonful of the mixture and shape it into small, flat, round bites.
  • Place them on the prepared baking sheet.

Bake:

  • Bake in the preheated oven for 20-25 minutes or until golden and firm.

  • Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
